Cooking Directions

• STEP 1.Preheat the oven to 325°F (160°C).
• STEP 2.In a food processor, crush the chocolate cookies until they resemble fine crumbs.
• STEP 3.In a bowl, mix the cookie crumbs with melted butter until well combined.
• STEP 4.Press the cookie mixture into the bottom of individual-sized cheesecake molds or ramekins.
• STEP 5.In a separate bowl, beat cream cheese, sugar, and instant coffee until smooth and creamy.
• STEP 6.Add eggs, one at a time, beating well after each addition.
• STEP 7.Pour the cream cheese mixture over the cookie crust in the molds.
• STEP 8.Bake in the preheated oven for about 25-30 minutes, or until the cheesecakes are set but still slightly jiggly in the center.
• STEP 9.Remove from the oven and let the cheesecakes cool to room temperature before refrigerating for at least 2 hours.
