Once hard to find, beautiful varieties of beets, such as pink-and-white-striped ‘chioggia, ' electric-yellow ‘golden detroit' and ruby-red ‘moneta, ' are more readily available. Seek them out at farmers' markets or supermarkets that stock local, in-season produce.
