A Kerala style stir fry with beetroot and carrot which forms a very tasty side dish. This carrot beetroot stir fry or mezhukkupuratti is from my childhood. I loved beetroot even as a child and preferred mezhukkupuratti (a Kerala-style stir-fry of vegetables with no coconut and very minimum spices), beans mezhukkupuratti being an all-time favourite. Amma and her mom made this carrot beetroot combination often and it goes great with sambar or any coconut-based gravy like tomato kuzhambu.

Ingredients for Carrot Beetroot Mezhukupuratti Recipe

  • 2 Chopped beetroot Nos
  • 2 No.s Chopped Carrot
  • 1 No.s Chopped Potato
  • 1 No.s Chopped Onion
  • 5 No.s Chopped Garlic cloves
  • 1 sprig Curry leaves
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Chilli Powder
  • 1/4 teaspoon Mustard seeds
  • 2 tablespoon Coconut oil
  • As required Salt

Directions: Carrot Beetroot Mezhukupuratti Recipe

step 1

  • STEP 1.set a pan on the stove on medium heat. Pour in 2 tsp coconut oil and splutter the mustard seeds.

step 2

  • STEP 1.add to the pan, chopped onions, chopped garlic and curry leaves. Saute the ingredients for a minute.

step 3

  • STEP 1.add in ¼ tsp of turmeric powder and 1 tsp chili powder. Saute for 2-3 minutes.

step 4

  • STEP 1.add in chopped beetroot, chopped carrots and chopped potatoes.

step 5

  • STEP 1.mix well the ingredients and cook with the lid on for 10 minutes on low flame.

step 6

  • STEP 1.after 10 minutes when the vegetables are well cooked turn off the flame and transfer into a serving dish.
