The dish consists of a mashed potato patty coated with chick pea flour, which is then deep-fried and served hot with chutney. The vada is typically around two or three cm in diameter.

4 potatoes, boiled and mashed medium
1 cup chopped fresh coriander leaves
4 garlic cloves
3 green chillies
0.5 piece ginger inch
1 teaspoon mustard seeds
0.5 teaspoon afoetida
4 curry leaves
0.75 teaspoon turmeric powder
NaN As required Salt
For batter
2 cup gram flour
0.5 teaspoon red chilli powder
1 teaspoon coriander powder
0.5 teaspoon cumin powder
1 pinch Asafoetida

Directions : Batata Vada Recipe

STEP 1.For the masala, put coriander leaves, garlic, green chillies, ginger and little water in a mixer jar and grind to a fine paste.

STEP 2.Heat a tablespoon oil in a non-stick pan, add mustard seeds and let them splutter.

STEP 3.Add asafoetida, curry leaves and masala paste and mix.

STEP 4.Add turmeric powder and cook for two minutes.

STEP 5.Add potatoes and salt and mix everything well. Sprinkle some water, add coriander leaves and mix well.

STEP 6.Cover and cook for two to three minutes.

STEP 7.Transfer the potato mixture onto a plate and set aside to cool for ten to fifteen minutes.

STEP 8.For the batter, put gram flour, salt, red chilli powder, turmeric powder, coriander powder, cumin powder, asafoetida in a bowl, add sufficient water and whisk well to make a semi thick batter without any lumps.

STEP 9.Add baking soda, mix well and set aside for ten minutes.

STEP 10.Heat sufficient oil in a kadai.

STEP 11.Divide the potato mixture into equal portions and roll into balls and press lightly.

STEP 12.Dip each ball in the batter, drain off excess batter and slide into the hot oil.

STEP 13.Deep-fry the vadas for four to five minutes on medium heat or till golden and crisp on the outside.

STEP 14.Drain on absorbent paper. arrange them on a serving platter and serve hot.
