STEP 1.Take a clean bowl, add a cup of semolina, half a cup of curd, add a salt, mix well. Add water as per need.
STEP 2. Make a smooth and thick batter while using little amount of water. Batter is now prepared. Keep aside and let it rest for 20 minutes.
STEP 3.After 20 minutes the batter has become thick.
STEP 4.Add a pinch of cooking soda, one-fourth cup of water, or as required and mix well. the batter now had pouring consistency.
STEP 5.It is now ready to cook.
STEP 6.Take a heating pan on medium flame and oil it . Spread the oil evenly.
STEP 7.Now place a ladleful of batter on the tawa/skillet/griddle and spread it evenly.
STEP 8.Add some chopped cabbage for sprinkling , tomatoes, chopped green chillies and some coriander leaves for sprinkling.
STEP 9.Pour some oil around the uttapam. gently press the vegetables
STEP 10.Cover it with a lid and let it cook for 2 minutes.
STEP 11. After a few minutes flip the uttapam and press on it a few times.
STEP 12.Let it cook for a minute. Once again flip it to cook evenly .
STEP 13.Sooji uttapam is now cooked and ready to serve hot.
