STEP 1.Take sliced onion in a bowl. Add chopped curry leaves, chopped ginger, chopped green chillies and 1 tsp salt. Mix it well with your hands.
STEP 2.Let it sit for 15 mins.
STEP 3.Add 4 tbsp gram flour and 4 tbsp maida. Mix it well.
STEP 4.Heat oil in a pan.
STEP 5.Take a small portion of the mixture and make balls. Keep the ball on your palm and gently press in the shape of Vada.
STEP 6. Fry it in medium flame until both sides become golden brown in colour. Make sure to fry the ullivada in batches.
STEP 7.Ullivada is ready to be served.
