STEP 1.Firstly chop aubergine into bite sized pieces. Add salt pepper and marinate. Keep aside for 10 minutes
STEP 2.In a sauce pan bring water to boil. Add a pinch of salt and few drops of oil. Add in tomatoes. In about 8 minutes turn of the heat. Take the skin out of tomatoes and let cool. Once cooled put in mixer and grind to a puree.
STEP 3.In the same water Add pasta to boil . Let it cook for about 10-12 minutes. Strain and keep aside.
STEP 4.Take a pan. Add olive oil and heat up. Put thinly sliced garlic and saute for a few seconds. Drop in the marinated aubergine and saute on high flame till it gets a nice golden color.
STEP 5.Meanwhile in another pan take some olive oil. Add in the tomato puree, pinch of salt pepper mixed herbs and mix. Cover n cook for about 2 minutes. Add in bell peppers olives cherry tomatoes n mix. Cover and cook for another minute. Add aubergine n boiled pasta. Cover n cook for a minute
