• 0.5 teaspoon Ground cumin
• 0.5 teaspoon Salt
• 1 cup Long grain white rice rinsed well and drained
• 2 cup Water
• 2 cup Chunky salsa
• 15 ounce Black beans rinsed and drained
• 1 cup Cooked corn kernels
• 2 tablespoon Chopped fresh cilantro
• 1 cup Shredded cheese cheddar, monterey jack and cheddar, or 4 cheese mexican blend
• Boston lettuce optional for serving
