• 2 Peppers, deseeded and sliced
• 2 Red onions, peeled and cut into wedges
• 3 Medium tomatoes, roughly chopped
• 2 Ripe Avocados
• 150 gram Pot soured cream, to serve
• bunch Small bunch coriander, roughly chopped
• 0.5 teaspoon Each chilli powder, dried thyme and ground cumin
• 1 teaspoon Each ground coriander and sweet paprika
• 2 tablespoon Sunflower oil
• 1 Zest and juice lime
• 1 Clove Garlic, Crushed
• 100 gram Mild peppadew peppers, drained
• 326 gram Pack flour tortillas, warmed, to serve
