Masala Rice can be prepared with leftover rice and is very easy to make. It is combined with veggies and spices. Garnished with fresh coriander leaves.
STEP 1.In a pan heat 1 tbsp ghee, 1 tsp mustard seeds and let splatter, then add 1 tsp of cumin, ½ tsp of fennel, a pinch of asafoetida and few curry leaves.
STEP 2.Now add ½ tsp of ginger garlic paste, 1 green chilli and ½ onion and saute until the onion is cooked.
STEP 3.Then add 1 tomato and saute till tomatoes turn mushy.
STEP 4.Add chopped carrots, beans, capsicum and green peas, cook for 5 minutes.
STEP 5.Then add ¼ tsp of turmeric, ¾ tsp of red chilli powder, 1 tsp of coriander powder and ½ tsp of garam masala. Saute for 2 minutes on low flame.
STEP 6.Add 2 cups of cooked rice and 1 tsp salt.
STEP 7.Mix the rice well in spices.
STEP 8.Cover and cook for 4 minutes.
STEP 9.Garnish with coriander leaves and serve masala rice on a plate and enjoy.
