• 2 Large baking potatoes, washed, peeled and cubed
• 2 tablespoon Butter

• 0.5 teaspoon Salt
• 2 tablespoon Diced green onions
• 10 Egg roll wrappers
• 1 Egg, lightly beaten
• 8 Strips of thick cut bacon, cooked and crumbled
• 3 ounce Sharp cheddar cheese, cut into small strips
• Canola oil for frying
• Ranch dressing for dipping, optional
