Easy to make healthy meal from Kerala. It is prepared from rice cooked in pressure cooker along with spices and ghee. Granished with fried onion toppings.
STEP 1.Into a pressure cooker add 1 cup of soaked rice,4 ½ cup of water,1 tsp asario seeds, ¼ tsp fenugreek seeds, ½ tsp of turmeric powder and salt as required.
STEP 2.Cook in the pressure cooker till 3-4 whistles.
STEP 3.Take in a mixer grinder ¾ cup of grated coconut, 4 pearl onions, 1 tsp of cumin seeds, ¼ tsp of coriander powder and 100ml of water. Grind to form a paste.
STEP 4.After 4 whistles open the lid of pressure. Mash the rice with the back of the ladle and pour in the ground paste. Also add 1 cup of water and mix well.
STEP 5.Allow the mix to boil. Turn off the flame once the rice comes to boil.
STEP 6.In a pan add 2 tbsp ghee and 2 tbsp sliced pearl onions. Saute it till golden brown.
STEP 7.Garnish the rice with fried onion toppings.
