STEP 1.Add maida, baking powder, cornflour and make batter. Add 1/4cup water and haldi powder in a batter , use more water as needed. Beat the batter well with the help of whisker and make a thick smooth batter.Batter should not be very thick it should be of free flowing consistancy. Cover the batter with a lid and keep it at room temperature for 5-6hours for fermentation.
STEP 2.Heat ghee for frying.Add jalebi batter in a plastic sauce bottle When ghee heated up make round jalebies by squeezing the bottle moving in circular direction starting from centre towards outside.
STEP 3.Take 2cup sugar and 1cup water in a kadai boil it and make 1string sugar syrup. Add illaichi powder and threads of kesar.Add 1/2teaspoon lemon juice to avoid crystallization of sugar
STEP 4.Add fried jalebies in hot sugar syrup for 2minute. Sugar syrup should not be cold. Take out jalebies from sugar syrup. Put the jalebies in a plate. Garnish the jalebies with sliced pista.
STEP 5.Serve hot. You can enjoy jalebies with curd or milk.
