500 gram Spare ribs
4 tablespoon Corn flour
1 tablespoon Cumin powder
1 teaspoon Ground black pepper
1 teaspoon Chili powder
1 teaspoon Garlic powder
1 teaspoon Ground coriander powder
4 No.s Sweet Potatoes

Directions : Fried Spare Ribs And Sweet Potato Chips Recipe
STEP 1.1 place 500 gm spare ribs in a saucepan and add 1 ltr boiling water.
STEP 2.2 cover and simmer for 1 ½ hours till tender. Then remove and drain the ribs.
STEP 3.3 in a bowl, combine 1 tbsp cumin powder, 1 tsp ground black pepper, 1 tsp chili powder ( optional), 1 tsp garlic powder, 1 tsp ground coriander powder, salt and then mix together.
STEP 4.4 in a large mixing bowl combine the boiled spare ribs with 4 tbsp cornflour and coat the ribs well.
STEP 5.5 in a wok heat 1 ltr oil till smoking hot, add the rebs and deep fry for 5 minutes.
STEP 6.6 when the ribs turn light brown, remove from the oil and place the ribs on a kitchen paper towel to drain off the excess grease.
STEP 7.7 into the same hot oil, place 4 sweet potatoes cut 1 cm by 4 cm long pieces and deep fry for 6 to 7 minutes till crispy. Then remove and drain the potato chips.
STEP 8.8 arrange the fried ribs and the sweet potato chips on a platter and sprinkle the spice mixture over them. Serve hot.
