• 2 cup Granulated sugar, or 11/2 cups granulated sugar and 1/2 cup packed light brown sugar
• 2 teaspoon Ground cinnamon
• 0.75 teaspoon Ground ginger, allspice, nutmeg, or cloves, or 1/4 teaspoon ground ginger and 1/4 teaspoon ground nutmeg
• 2 teaspoon Double acting baking powder
• 1 teaspoon Baking soda
• 1 teaspoon Salt
• 1.5 cup Vegetable Or Peanut Oil
• 4 Large Eggs, Lightly Beaten
• 2 teaspoon Vanilla extract
• 3.5 cup Lightly packed finely grated carrots
• 1 cup Raisins, chopped pitted dates, or blueberries
• 1 cup Shredded coconut
• 1 cup Toasted and coarsely chopped pecans or walnuts
• 1 cup Canned crushed pineapple, drained
• 2 cup Cream cheese softened
• 10 tablespoon Unsalted butter softened
• 1 tablespoon Pure vanilla extract
• 2 tablespoon Fresh lemon juice, 21/2 tablespoons sour cream, or 1 tablespoon orange liqueur

• 3 cup Confectioners Sugar, Sifted
• 1 cup Marzipan carrots or about toasted coconut for garnish
