  • 3/4 cup Vegetable Or Peanut Oil
  • 2 Large Eggs, Lightly Beaten
  • 1 teaspoon Vanilla extract
  • 1.75 cup Lightly packed finely grated carrots
  • 1/2 cup Raisins, chopped pitted dates, or blueberries
  • 1/2 cup Shredded coconut
  • 1/2 cup Toasted and coarsely chopped pecans or walnuts
  • 1/2 cup Canned crushed pineapple, drained
  • 1 cup Cream cheese softened
  • 5 tablespoon Unsalted butter softened
  • 1/2 tablespoon Pure vanilla extract
  • 1 tablespoon Fresh lemon juice, 21/2 tablespoons sour cream, or 1 tablespoon orange liqueur
  • pinch Pinch salt
  • 1.50 cup Confectioners Sugar, Sifted
  • 1/2 cup Marzipan carrots or about toasted coconut for garnish
