Why Mexican Pulque Was The Fermented Spirit Predating Tequila
Ancient, hazy, and defiantly undistilled, pulque is Mexico's silent, heaven-like beverage. It ferments naturally from freshly scraped agave sap, transforming sweet aguamiel into a thick, somewhat acidic beverage with very little burn. Pulque was used to power ceremonies, daily life, and rural communities long before tequila or mezcal were even conceived. Beer pushed it aside, but it never vanished. Pulque is still present today in traditional pulquerías, which are messy, vibrant, and distinctly Mexican.
