Gobi Manchurian: Saucy, Spicy and Crispy

One of the prime selling dishes in restaurants, Gobi Manchurian is a delicious and popular Indian-Chinese recipe. It is loaded with a lot of flavours and spices.

It is served as an appetizer snack and can be prepared dry or saucy (gravy-based). It is a flavourful dish which is a mash-up of a variety of vegetables, sauces, herbs and spices. Check out how to prepare it at home.

Ingredients:

•           1 Cauliflower 

•           1 cup All Purpose Flour

•           4 tsp Cornstarch 

•           ¼ tsp Black Pepper Powder 

•           ¼ to ½ tsp Kashmiri Red Chilli Powder 

•           1 tsp Soy Sauce 

•           1 cup Water or add as required

•           5 to 6 tsp Oil 

•           ¾ cup Chopped Spring Onion 

•           ½ cup Finely Chopped Capsicum 

•           1.5 inches Ginger 

•           8 to 10 garlic 

•           2 Green Chilies 

•           ½ tsp finely chopped Celery 

•           1.5 tsp Soy Sauce 

•           1 tsp Tomato Ketchup 

•           1 tsp Rice Vinegar 

•           ¼ to ½ tsp Black Pepper Powder 

•           Salt as required

Method:

  1. In this step, chop the cauliflower into small sized florets
  2. Next, heat water with salt and boil them. Also, wash the cauliflower florets and put them in the hot water
  3. Now, let them get blanched in the water for approximately 15 to 20 minutes and drain them once done
  4. Now, let’s fry the cauliflower so take a bowl and mix these ingredients for preparing the batter – all-purpose flour, cornstarch, soy sauce, black pepper, kashmiri red chilli powder as well as salt as per your taste
  5. Put water and whisk to prepare a smooth batter which doesn’t have any lumps
  6. Next, put each cauliflower floret in the batter and take out one by one
  7. Fry the batter-coated cauliflower florets in a pan by adding oil. Cook them from each side and take out once they turn crisp and change colour to light golden
  8. Follow the process to fry all the cauliflower florets until all are prepared
  9. Now, drain these fried cauliflower florets on kitchen paper or a towel
  10. Now let’s prepare the recipe, use the same remaining oil and put chopped ginger, garlic and green chillies. Stir them for a few seconds till the raw aroma of ginger and garlic subsides and they turn light brown
  11. Then put the chopped spring onions and capsicum as well followed by chopped celery. Saute them on a medium-high flame until the capsicum is half or almost cooked
  12. Put soy sauce, tomato ketchup, black pepper and salt as per your taste and stir them. After this put the pan-fried cauliflower florets in the same pan
  13. Mix all the ingredients well ensuring that the sauces coat the fried cauliflower florets properly and nicely
  14. Finally, add rice vinegar and mix again. Switch off the flame once done. Check the taste of the recipe and if needed add sauces or spices as per your preference 
  15. Now garnish the dish with chopped spring onions and greens and finally serve hot Gobi Manchurian

Dry Gobi Manchurian can be served as a snack or a side dish with Fried Rice or Hakka Noodles.
