Bharwan Gobhi: The Perfect Appetizer For Your New Year Party Menu

With the year about to end in just a few days, we know your hearts are full of gratitude and love. The year 2021 was full of ups and downs, and only we know how we have come this far to bid it adieu. Keeping all the sorrowful memories aside, it's time for us to end the year on a happy note. And are memories and times even happy without food? Umm, we don’t think so. So, as New Years Day is arriving in a few days, it’s time for us to indulge in all things fun and delicious.

This year is full of fun-filled festive occasions, and winter is an add-on. The myriads of winter products up for grabs are a cherry on the cake, making the festivities more joyous. The winter batch of veggies is nutritious, delicious, and much-awaited, from the leafy bounties to root veggies. One of these winter bounties is cauliflower. Although the veggie is available year-round, it is essentially a winter product. The freshly harvested cauliflowers are full of nutrition and taste and are a perfect addition to your winter diet.

As the new year is about to come, we know you are busy planning your house party. So, here is a flavourful addition to your appetizers menu to make your job easier. The rich, robust and moreish dish is popularly called bharwan gobhi. The cauliflower florets are blanched, stuffed with a cheese and khoya filling, coated in a besan batter and deep-fried to perfection.

To make bharwan gobhi:

  1. Blanch the florets with salt and turmeric.
  2. Add khoya, processed cheese, raisins, coriander leaves, cashews and a pinch of salt to a bowl and mix well to combine.
  3. Fill the crevices of the cauliflowers with this mixture.
  4. Add besan, salt, red chilli powder, turmeric, minced garlic and ajwain to a bowl and make a thick batter.
  5. Coat the florets in the batter and deep-fry them to perfection.

Serve the florets with a dipping sauce on the side and relish.
