STEP 1.Heat butter and fry all the ingredients for the stock for a couple of mins.
STEP 2.Add 1/2 litre of water and simmer for 1 hour. Drain and keep aside.
STEP 3.Into the heated oil, fry shallots and garlic for about 2-3 mins. Add stock and salt to taste. Once simmering, put in broccoli. Add button mushrooms when broccoli becomes half cooked.
STEP 4.Continue to simmer for another 3-4 mins. Off heat and add pepper to taste. Serve while piping hot with garnishing of spring onions.
