• For the salad
• 1 tablespoon Olive oil
• 0.5 inch 1 medium to large sweet potato, cut into cubes
• 1 bunch Tuscan kale, stems removed and very finely chopped
• 0.5 cup Dried cranberries
• 1 Avocado, sliced or diced
• 0.5 cup Wasabi peas, for crunch
• For the sweet and spicy pistachios
• 0.5 cup Shelled roasted pistachios
• 1 tablespoon Pure maple syrup
• 0.25 teaspoon Cayenne pepper
• Sprinkle of sea salt
