• 1 Yellow squash or zucchini, chopped
• 2 Slices of lemon, seeded
• 0.5 cup Quick cooking barley or parboiled rice
• 1 can Diced tomatoes, undrained
• As required Salt and pepper to taste
• 4 cup Croutons
• 1 cup Shredded cheese of your choice for serving
