A salsa is a mixture of chopped vegetables or fruit with a variety of flavourings. A side dish originating in mexican cuisine, it is now popular served with barbequed meats, chicken or seafood. Tomatoes are often used as the base and combined with cucumber, onion, garlic, herbs and lemon or lime juice. Salsas can be fresh or cooked and range from spicy to sweet. Other favourites include mango, corn, avocado, pawpaw, coriander, chilli and pineapple.
