One of my favorite soups has always been a roasted red pepper soup. The addition of chicken and corn really kicks it up a notch.

Ingredients For Roasted Red Pepper Soup With Grilled Chicken And Corn Recipe

3 tablespoon Buter
0.5 cup All purpose flour
2 Stalks celery diced diced
0.5 Onion diced
2.5 cup Roasted peppers pureed canned or make roast your own
3.5 cup Chicken stock or vegetable stock
1 tablespoon Sugar
1 tablespoon Franks buffalo sauce
As required Sea salt to taste
4 ounce Shredded cooked chicken
4 ounce Roasted or grilled corn off the cob
1 tablespoon Chopped cilantro garnish each bowl with a sprinkle
1 tablespoon Garnish each bowl of soup with low fat greek yogurt or sour cream
