• 2 tablespoon Olive oil
• 1 Yellow onion, finely diced
• 3 Cloves garlic, minced
• 1 teaspoon Dried thyme
• 4 cup Vegetable broth, or chicken broth
• 0.5 cup Milk, or 1/2 and half
• 1.5 cup White cheddar cheese, or monterey jack cheese, shredded
• As required Salt and pepper, to taste
• Fresh parsley, for garnish, chopped
• 3 Strips bacon, cooked and crumbled
