• 0.25 cup Yellow or white cornmeal preferably stone ground
• 0.5 teaspoon Coarse kosher salt
• 3 ounce Cream cheese cold and cut into 4 chunks
• 2 tablespoon Ice water
• 8 Slices thick cut bacon
• 1 tablespoon Olive oil
• 2 pound Onions thinly sliced
• 0.5 teaspoon Coarse kosher salt
• 0.5 teaspoon Fresh thyme leaves
• 0.75 cup Crumbled fresh goat cheese
• Milk for brushing the crust
