STEP 1.Wash basmati rice & keep soaked in water for 30 minutes. Then drain the water.
STEP 2.Deshell & devein the prawns, then keep marinated with turmeric powder & salt.
STEP 3.Cut the onion into thin slices & keep aside.
STEP 4.In a kadai heat white oil & 2 tbsp of ghee together, saute the prawns slightly & keep aside.
STEP 5.In the same oil+ghee add bay leaves, cloves, green cardamom, cinnamon sticks & black peppercorns.
STEP 6.When it all crackles, add the onion slices & fry for a while.
STEP 7.When the onion turns s bit brown then add ginger-garlic paste & green chilli paste. Fry for a few more minutes.
STEP 8.Now add the water drained basmati rice, add salt.
STEP 9.Fry the rice for a while, then add the light coconut milk & mix well. Cover & keep on medium flame & let the rice get cooked.
STEP 10.When the rice gets half cooked then add the sauteed prawns, sugar & thick coconut milk. Mix well, cover & keep on medium flame for some more minutes.
STEP 11.When the rice gets completely done & water dries up then add the remaining 2 tbsp of ghee.
STEP 12.Give it a light mix, take off flame & serve hot this super delicious pulao.
