A delicious preparation of prawns cooked in spices and tomato gravy, topped with rice and finished with saffron milk, crispy fried onions and fresh herbs.
STEP 1.In a mixing bowl add 250 gms cleaned prawns, add ½ tsp turmeric powder, 1 tbsp lemon juice and keep aside to marinate.

STEP 1.Heat a pan and add 1 ½ tbsp ghee, 1 tsp cumin seeds, 1 ½ inch cinnamon stick, 1 bay leaf, 10 to 12 peppercorns, 5 to6 green cardamoms, 1 black cardamom, 1 mace, 3 to 4 cloves, 1 star anise, 2 medium onions sliced. Saute till onions are translucent. Add 1 tbsp ginger-garlic paste and mix well. Add a few tbsp water.

STEP 1.Then add 1 large chopped tomato and cook till it softens. Add 1 tbsp red chilli powder, 2 tbsp coriander ( dhaniya) powder, ¼ tsp turmeric (haldi) powder and mix well. Add a little water and stir well to mix all the ingredients together.

STEP 1.Add 3 to 4 tbsp curd (dahi/ yogurt) and mix well.

STEP 1.Add the marinated prawns and stir to ensure that prawns are well coated with the masala. Cook for 1 minute.

STEP 1.Then add 1 tbsp biryani masala, 2 to 3 slit green chillies and cook for 2 minutes.

STEP 1.Add salt to taste, 1 tbsp chopped coriander and mint leaves. Mix together.

STEP 1.Add 1 tbsp crispy fried onions and mix.

STEP 1.At this stage add 3 cups of cooked rice over the prawns masala. Spread it out as an even layer. Do not mix it with the prawns.

STEP 1.Pour ¼ cup of saffron milk over the rice. Sprinkle 1 tsp julienned ginger 1 tbsp spoon chopped coriander leaves and 1 tbsp crispy fried onions.

STEP 1.Cover the vessel and cook on low heat for 10 to 15 minutes. Turn off the heat.

STEP 1.Prawn biryani is ready.
