STEP 1.Wash and peel the potatoes.Cut it into little thick long slices.
STEP 2.Take a pan, add water and add potato slices in it.
STEP 3.Cover and cook for 3-4 mins. Drain out the water and transfer the potato slices in a plate.
STEP 4.Sprinkle all purpose flour (Maida) over it and gently mix it well.
STEP 5.Heat oil in a pan and On medium- high flame deep fry the wedges in 2-3 batches. Fry until it becomes crispy and light brown.
STEP 6.Remove it in a plate and Sprinkle salt, mix herbs and mix it well.
STEP 7.Serve hot with Tomato ketchup.
