STEP 1.Soak dried pork rind and squid in water overnight. Soak shiitake mushroom in 200 ml water overnight. boil chicken drumstick. Add oil in a pot and heat it. Add minced garlic, ginger slices, shallots and saute it.

STEP 1.Then add sliced onions, fermented tofu and pork belly pieces. Once fat of pork belly becomes tender, add fennel seeds, tangerine peel, star anise and black vinegar. Add 50 ml of water and stir well. Turn the gas at high flame and bring it to a boil, once boiled lower the flame and cook it for 1 hour. Add salt and sugar as per taste.

STEP 1.Separately in a pan,add oil,minced garlic and saute. Add fermented tofu and saute it. Then add fried pork skin and water to increase the flame and bring it to a boil. Once it boils reduce the flame and cook it at low flame for 10 minutes.

STEP 1.Use water from soaked shiitake mushrooms and add in into the pan and cook it at low flame until gravy thickens.

STEP 1.Deep fry prawns and tofu skin in a pan until it turns golden brown and keep it aside.

STEP 1.Coat fish pieces in corn flour, salt, pepper and deep fry it until golden brown and keep it aside.

STEP 1.Now for the second layer, place squid, shiitake mushroom, stewed pork belly, do not add the stewed pork belly gravy.

STEP 1.Lastly put fish balls, chicken, fried fish, fried prawns & broccoli on top.

STEP 1.Cover the pot and and let all the ingredients cook at low flame for 5-10 mins before serving. Add 1 tsp of water of too dry.
