STEP 1.1 soak the dry vegetables from the package in water for upto 30 minutes.
STEP 2.1 in a pan add ½ cup oil. Allow it to get hot. Add ½ a sliced onion and saute for 30 seconds.
STEP 3.2 add 2 ½tbsp of minced garlic cloves and 2 ½ bsp of minced ginger. Saute on medium heat and cook for about 3 minutes till onions are soft and the raw smell of ginger garlic goes away.
STEP 4.3 add 1 tbsp of turmeric (haldi) powder, 2tbsp red chili powder and 1tbsp salt. Mix well and cook for 2 minutes.
STEP 5.4 next add 3 cups chopped chicken pieces and mix to combine well. Allow the chicken to cook on low to medium flame till all the released by the chicken evaporates. Stir frequently.
STEP 6.5 put a saucepan of water on the heat and bring it to a boil.
STEP 7.6 remove the soaking vegetables and strain off the water. Add these vegetables to the boiling water in the saucepan along with the noodles.
STEP 8.7 to this add the cooked chicken and gravy from the pan.
STEP 9.8 add 2 tsp ajino moto and mix well. Cover and cook for 10 minutes.
STEP 10.9 kyar zan chat is ready. Serve with chopped coriander leaves and a wedge of lime.
