STEP 1.Prepare the Yogurt Mixture:In a large bowl, whisk the yogurt until smooth.Add the besan and mix well to ensure there are no lumps.Add water gradually while mixing to form a smooth, thin batter.Cooking the Kadhi:Heat ghee or oil in a large pan or kadhai over medium heat.Add cumin seeds, mustard seeds, cloves, cinnamon stick, curry leaves, and dried red chilies. Let them splutter.Add a pinch of asafoetida, green chilies, and grated ginger. Sauté for a minute.Combine and Simmer:Pour the yogurt mixture into the pan. Stir continuously to prevent curdling.Add turmeric powder and salt. Mix well.Bring the mixture to a boil while stirring continuously.Once it starts boiling, reduce the heat and let it simmer for about 15-20 minutes. Stir occasionally.Add jaggery or sugar if you prefer a slightly sweet flavor. Adjust the seasoning as needed.
