In this recipe Egg Biriyani is cooked on dum. This process makes Biriyani more flavourful.i in dum cooking partially cooked rice & eggs are layered & cooked together in a pot over a low flame.
Ingredients For Hyderabadi Egg Dum Biriyani Recipe
3 g Ghee
to taste Salt
2 A Few Bay leaf
1 inch Cinnamon
2 Inch Cloves
2 Tbsp Oil
6 Pieces Eggs boiled
1 tsp Turmeric powder
1 tsp Red chilli powder
2 tsp Biriyani Masala Powder
1 A Few Star anise
2 g Green cardamom
1 A Few Black cardamom
1 tsp Caraway seeds
1 Pieces Onion chopped
3 tbsp Ginger garlic paste
1 tsp Coriander powder
2 tbsp Curd
2 g Chopped gree chillies
1 cup Fried onions
2 drop Kewra essence
2 drop Rose water
a pinch Saffron milk (soak a pinch of Saffron in hot milk)
500 g rm Basmati rice cooked
1 cup Fried onions (Birista)
1 tsp Cardamom powder
Directions : Hyderabadi Egg Dum Biriyani Recipe
STEP 1.Heat a pan 2tbsp of oil over low flame, add Turmeric Powder, red chilli powder, Coriander powder, salt, saute 1 min add egg & coat it in the spices.
STEP 2.Add the same pan chopped onion & saute for a minute, add ginger garlic paste, add curd, chopped green chili and cook stirring it continuously until it comes to a boil.
STEP 3.Egg mix it with the Masala, Cover & cook for 3min until oil starts to leave from the Masala.
STEP 4.Layering the Biriyani= Big sized biriyani handi, firstly add egg masala curry, & add the cooked Basmati rice, layer it evenly, add fried onions, add Biriyani Masala Powder, cardamom powder, kewra essence, rose water, Saffron milk, & ghee, Cover with a tight fitting biriyani handi lid then seal the biriyani pan with dough.
STEP 5.Heat a tawa over the flame, Place the Biriyani handi over the tawa, it is an important step because it will prevent the Biriyani from getting contact with direct heat.
STEP 6.Cook on high flame for 5 minutes lower the flame & cook for 15 minutes, switch off the flame keep it aside for 10 minutes, Open the Biriyani Handi and sarving Hyderabadi egg dum Biriyani.
