STEP 1. To make the pani, in a blender add ¼ cup coriander leaves, ¼ cup mint leaves, 12 green chillies roughly broken,½ tsp red chilli powder, 1 tsp black salt, 1 tsp chaat masala powder, 1/2 tsp cumin powder, 1 tbsp jaggery, 1 tsp hing and 1 cup tamarind water. Add 1 cup plain water or more (adjust according to taste).
STEP 2. Blend To make a smooth paste.
STEP 3. To make the filing, in a mixing bowl add 3 boiled and roughly mashed potatoes, ½ cup green moong sprouts, ½ tsp red chilli powder, 1 tsp cumin powder, ½ tsp black salt, 1 tsp chaat masala anda handful of chopped coriander leaves. Mix well to combine all the ingredients. Filling is ready.
STEP 4. To assemble the pani puri, pour the pani from the blender into a large bowl. Taste for seasoning and just accordingly. Add a few ice cubes.
STEP 5. Take a puri, make a small hole and fill it with a little bit of the potato filling. Then dunk it in the pani to fill it and then take a bite. Enjoy Hing Pani puri.
