These are made with wholewheat flour without any maida. It was a first try on layered mathri with atta and it turned out amazing, very crispy and flaky..
STEP 1.1.Mix all the ingredients for dough except water and rub between palms so the flour comes in bread crumbs texture. Add water in little quantity and knead a smooth semi hard dough. Apply oil over the dough ball, cover and keep aside for about 10-15minutes.
STEP 2.2.Make a paste of ghee and atta and keep aside.
STEP 3.3.Knead the dough again for a minute and divide into 5 equal parts. Roll each dough ball into a very thin roti such that the surface is visible. Make all the 5 rotis like this.
STEP 4.4.Take one roti and apply the ghee atta paste all over it and place 2nd roti on top of it. Do the same with all 5 rotis and press lightly.
STEP 5.5.Cut the sides of the round layered roti so we get a square or rectangle shape. Cut this further into 12 equal parts such that small rectangular pieces are formed. Cut each rectangular piece further into a 2 triangles.
STEP 6.6.Take each triangular layered piece and take the far ends of the triangle and join them by overlapping one over the other. Press the ends very well so it dont open while frying. Do the same with all the pieces.
STEP 7.7.Heat oil in a kadai/pan and once its hot, keep the flame on low and fry the Mathri
STEP 8.8.Keep the flame low all the time. Do not put too many or touch them till they come on top. Fry till golden brown from all the sides.
STEP 9.Once cooled, store in airtight container
