• 3 teaspoon Coconut or avocado oil divided
• 2 pound Brown mushrooms
• 1 Large onion finely chopped
• 2 Large garlic cloves minced
• 3 Large celery stalks finely chopped
• 28 ounce Can diced tomatoes low sodium
• 2 cup Chicken stock low sodium
• 2 teaspoon Basil dried
• 0.75 teaspoon Salt
• 0.25 teaspoon Ground black pepper
• 3 tablespoon Parsley finely chopped
