It's a very famous dhaba style recipe for northindia. The egg varta is very delicious and easy to cook . The perfect dinner or lunch recipe for everyone.
STEP 1.Heat oil in a wok or fry pan, add chopped ginger-garlic-chilli and saute it for few seconds until the raw smell goes off. Now add chopped onions and salt, fry it till it turns light brown in color .
STEP 2.When onions are cooked properly and become golden brown in color then add chopped tomatoes and saute it for 2-3 minutes- Add tomato ketchup and again mix it well and cook in on low flame for a minute.
STEP 3.add sugar and all the powdered spices and cook it on low flame for 2 minutes. Furthermore, cover it and let it cook for 5 minutes.
STEP 4.If the mixture is looking dry you can add few splashes of water but not too much. Next, add yogurt to the masala and cook it for another 1-2 minutes.
STEP 5.Now add the sliced eggs and keep stirring until the yolks get mashed into the masala and you see the egg whites only.
STEP 6.At this stage add chopped coriander
STEP 7.leaves and mix it and again cover it for 2 minutes. Open the lid and mix the bharta and switch off the gas.
STEP 8.Garnish it with eggs and coriander leaves.
