• 3 Bay leaves
• 6 Chicken thigh cutlets, bone in and skin
• 1 tablespoon Extra virgin olive oil
• 180 gram Speck, rind removed, cut into 1cm thick batons
• 100 gram Swiss brown mushrooms, halved
• 3 Portobello mushrooms, thickly sliced
• 2 Small red onions, quartered
• 60 gram Unsalted Butter, At Room Temperature
• 1 teaspoon Smoked salt flakes, plus extra, to serve
• Small fresh continental parsley leaves, to serve
