Tender slightly charred pork stir fried with crunchy celery and chilies. Pork loin and crunchy celery stir fry tossed in a salty soy and hoisin sauce. A healthy and delicious stir-fry favored by both kids & adults.
STEP 1.wash and pluck all the leaves off a bunch of celery stalks. Cut the stalks into 1 ½ inch pieces.

STEP 1.thinly sliced 1 red chili and 1 green chili.

STEP 1.roughly crush 4 cloves of garlic.
STEP 1.1 thinly slice 300 gm pork shoulder and place it in a mixing bowl.

STEP 1.add ¼ tsp salt, ¼ tsp baking soda to tenderize the pork, 1 tbsp soy sauce, 2 tsp chinese cooking wine, 2 tsp cornstarch. Mix it well to ensure the pork is well coated. Cover the bowl and let the meat marinate for 20 minutes.

STEP 1.place a wok on the heat and heat it till it begins to emit smoke. Then add 1 tbsp oil and swirl it around to cover the hot surface of the wok.

STEP 1.add the marinated pork pieces and stir it briskly on high heat for 2 minutes till the colour of the meat changes.
STEP 2.5 turn off the heat and remove the wok.
STEP 3.6 transfer the pork to a bowl.
STEP 4.7 add 2 tsp oil to the same wok and add 1 bunch celery stalks chopped into 1 ½ inch pieces, 4 smashed cloves garlic and 1 red and 1 green chili sliced.
STEP 5.8 stir fry on high heat for 3 minutes. If softer vegetables are desired, cook for longer.
STEP 6.9 add salt and mix well.
STEP 7.10 add the pork pieces back to the wok and stir fry all the ingredients together to combine flavours. Turn off the what.
