500 g use any pasta
0.5 Cup Cherry Tomatoes, Chopped
1 Cup Small Cucumber, Finely Chopped
1 Cup Red Bell Pepper, Seeded And Chopped
1 Nos Small Red Onion, Chopped
0.5 Cups Slice black olives
0.5 Cup feta cheese (grated)
0.5 Cup Fresh Basil Leaves, Torn
0.25 Cup Parsely fresh, finely chopped

Cooking Directions
STEP 1.Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
STEP 2.In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, feta cheese, basil, and parsley.
STEP 3.In a separate small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper to make the dressing.
STEP 4.Pour the dressing over the pasta salad and toss everything together until well coated. Cover the bowl and refrigerate for at least 1 hour to let the flavours meld together.
Cooking Tips
Choose a pasta shape with nooks and crannies that can hold onto the dressing and other ingredients. Rotini, bowtie, or penne pasta work well.
