Directions: Bob Barker's Summertime Pasta Salad Recipe

Cooking Directions

  • STEP 1.Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
  • STEP 2.In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, feta cheese, basil, and parsley.
  • STEP 3.In a separate small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper to make the dressing.
  • STEP 4.Pour the dressing over the pasta salad and toss everything together until well coated. Cover the bowl and refrigerate for at least 1 hour to let the flavours meld together.

Cooking Tips

  • Choose a pasta shape with nooks and crannies that can hold onto the dressing and other ingredients. Rotini, bowtie, or penne pasta work well.
  • You can prepare the salad ingredients and the dressing a day in advance and refrigerate them separately. Combine them just before serving to keep the pasta salad fresh.

Serving Tips

  • Just before serving, garnish the pasta salad with a few fresh basil and parsley leaves to add a burst of colour and extra flavour.
  • If you want to make it a heartier meal, you can add grilled chicken or shrimp to the pasta salad.
