When we hear the word Paratha, our mouth starts watering. Whether it’s stuffed Paratha or just a plain one, Parathas are a comfort meal that can be devoured even post mid-night. Parathas have always been an integral part of the North Indian cuisine, however the Mughlai Paratha is an exception to that. This Paratha is actually from the eastern part of India - from Bengal! The Paratha recipe is mostly enjoyed as a snack and is a popular street food recipe. Traditionally the Mughlai Paratha has a non vegetarian stuffing of minced mutton or chicken. The Paratha is also layered with egg yolk and deep fried. However, with time, the recipe for this delight has undergone many changes. Today, there exist several variations of the Mughlai Paratha. 

The classic way of making the Mughlai Paratha takes some time and the meat is cooked, however, these days it can be made easily at home. All you need to prepare for this delicious paratha recipe is: Eggs, onion, green chilies, whole wheat flour, all purpose flour, and coriander leaves. Ingredients:

For the dough - 

AIl purpose flour(Maida) - 1.5 cups

Oil - 2 tbsp

Salt as per taste

Eggs - 3

Onion - 1 medium finely chopped

Coriander leaves - 1 tbsp

Salt as per taste

Red chilli flakes - 1 tsp

Chaat masala - 1 tsp

Garam masala - 1/4th tsp

Oil - to deep fry

Method:

Make the dough using, all purpose flour, oil, salt and water. 

Take a bowl and add eggs, onion, coriander, chilli flakes, chaat masala, salt, garam masala and whisk well. 

Roll out the dough in to the form of a Paratha and add prepared egg mixture in the middle. 

Fold the Paratha from all four sides and seal well. 

Deep fry on medium heat and enjoy this delicious Bengali street food.
