Special Recipes For This Festive Season

Beginning the end of September, we have officially entered in that time of the year when every other day is a party or a get together or an event. With many festivals lined up, festivities have no end. And in India, festivities mean good food and a jolly good time. There are a lot of ways that we celebrate festivals and the numero uno method still remains eating and enjoying amazing food.

So, if this festive season, you want to cook something unique but still close to our roots, we have two amazing vegetarian recipes for you that you would absolutely love eating. Samak Ki Khichdi

Ingredients

  • 1 cup samak rice
  • 3 tbspn grounded peanuts
  • 3 tbspn ghee for tadka
  • 1 potato chopped in small pieces
  • Upwas salt as per test
  • 4 tbspn curd
  • 1/2 tspn jeera
  • Make ready 1/4 tspn garam masala
  • Star anise, cinnamon stick, clove 1 piece each
  • 8-10 Kari patta
  • 1 1/2 cup water
  • 6 green chillies and handful of coriander paste

Method

  • Wash samak rice and keep all ingredients ready.
  • In cooker heat ghee and add jeera, star anise, Cinnamon.
  • Add curry leaves and grounded peanuts share till peanuts become golden in colour add chillies coriander paste and saute for a minute.
  • Add potatoes, salt, garam masala and mix well.
  • Add samak rice, curd and water mix well and cook until three whistles.
  • Samak rice khichdi it ready to serve.

Carrot Halwa With Mango Bavarin

Ingredients
  • 300 ml Mango pulp
  • 150 gm Sugar
  • 200 ml Amul cream
  • 350 gms Whip cream
  • 50 gms Mango dice
  • 5ml Vanilla essence
  • 200 gms Carrot halwa

Method

  • Take the mango pulp in a glass bowl. Take 150 gm of sugar and 200ml of Amul fresh cream and vanilla essence.
  • Beat cream and sugar till sugar dissolves, add whip cream and fold with mango pulp. Keep the mixture aside.
  • Take 200 gm of carrot halwa, pour the Bavarin mix in dessert mould and half filled. Put halwa in center layer and top with Bavarin mix.
  • Set the bowl in fridge for 30 minutes and serve cold.
