3 Lesser-Known Saag Recipes You Should Try This Season

The winter season is synonymous with the expansive variety of vegetables it brings along - each of which is nutrient-rich and healthy. Our pantry is packed with colourful treats from fresh beans, cauliflowers and carrots during the cold months. Another veggie that we get in plenty is leafy greens or saag. Are you aware of the various saag varieties? Apart from sarso, we also get bathua, methi, palak saag and more. Besides being scrumptious, each is loaded with fibre, protein, minerals and vitamins, giving overall health benefits. Considering the aspects, we get you a list of saag recipes to try during the season. These are healthily delicious, complementing the seasonal vibe. Here are three saag recipes for you:

CHAULAI KA SAAG (AMARNATH GREENS)

Ingredients:

  1. Ginger - 1/2 inch finely chopped
  2. Coriander powder - 1/2 tsp
  3. Red chilli powder - 1/2 tsp
  4. Garam masala - 1/2 tsp
  5. Amaranth - 500 grams
  6. Salt - as per taste
  7. Turmeric - 1/2 tsp
  8. Onion - 1 grated
  9. Cumin - 1/2 tsp
  10. Garlic - 3 buds
  11. Oil - 1/3 cup
  12. Bay leaf – 2

Method:

  1. Clean the greens properly, cut them finely and put them in a vessel
  2. Heat oil, add cumin, bay leaf, ginger and garlic in a pan. Now fry until it becomes light brown
  3. After 2-3 minutes, add onion and fry it well
  4. Add amaranth, salt, garam masala, other ingredients and mix them well
  5. Cook until it becomes soft and turns off the stove
  6. If you want, you can also make it by adding boiled potatoes or paneer

METHI SAAG

Ingredients:

  1. Coriander leaves - 1/2 teaspoon
  2. Fenugreek greens - 300 grams
  3. Black pepper powder - 1/2 tsp
  4. Green onion - 1/2 cup
  5. Tomato - 1 chopped
  6. Salt - as per taste
  7. Cumin - 1 /2 tsp
  8. Peas - 1/2 cup
  9. Green chilli - 3
  10. Oil - 1/2 cup
  11. Clove - 2

Method:

  1. Clean the fenugreek, cut it finely, wash it in water, and keep it aside so that the water comes out from the greens
  2. Clean and chop the green onions.
  3. After this, heat oil in a pan, add cumin, green chilli, onion and fry them well.
  4. When the onion looks light golden, add peas, black pepper powder, salt, cloves and let it cook for 7-8 minutes.
  5. After 8 minutes, put fenugreek greens in it, stir it well, and cover it for some time.
  6. After adding coriander leaves, please turn off the stove and mix it well after a while

BATHUA SAAG

Ingredients:

  1. Green chilli - 2 finely chopped 
  2. Bathua greens - 700 grams
  3. Salt - according to taste
  4. Tomato - 1 chopped
  5. Garlic - 4-5 buds
  6. Cumin - 1/2 tsp
  7. Oil - 1/2 cup

Method:

  1. Clean the greens thoroughly in water 3-4 times and chop them finely.
  2. Put it in the cooker and take it off after 2-3 whistles so that the water comes out from the greens.
  3. Heat oil, add all the ingredients and fry them well in a pan.
  4. After frying, put the greens in it and cook for some time; turn off the stove.

Note: If you want, you can also add potatoes, paneer or any other green vegetable to all these saag recipes.
