Saag Gosht: A Traditional Supper Recipe From Haryana

With fresh ingredients and simple recipes, the cuisine of Haryana is known to be simple. Roti is a staple part of the Haryanvi diet. People are fond of eating several varieties of roti but wheat is most preferable. Paired with rotis are some famous dishes like kachri ki sabzi, methi gajar, mixed dal as well as khichdi. Another interesting fact about the state is that it is known for its cattle wealth which is why there is an abundance of milk and milk products in Haryana. Most of the households in the state prefer homemade ghee and butter over market products.  As most of the popular dishes of Haryana are vegetarian, the meat is usually paired with vegetables. Saag Gosht is one such dish of the state.

Saag Gosht, also known as lamb and spinach curry, is a traditional supper of Haryana. A combination of spinach with lamb meat, this dish is packed with nutrition. While lamb is a source of protein and spinach is known for being rich in vitamins and minerals along with antioxidants. This Haryanvi dish is also popular in many other parts of North India too. This dish is made with a culmination of spices, along with onions and tomatoes, which makes it perfect to pair with roti as well as rice.

Here is the recipe of healthy and tasty Saag Gosht you can cook for your family:

Ingredients:

  • ½ cup vegetable oil
  • 3 onions finely diced
  • 3 tomatoes
  • 5 garlic cloves
  • 1 inch ginger
  • 1 tsp salt
  • 2 tsp chilli powder
  • 1 tsp turmeric powder
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • 1 tbsp dried fenugreek leaves
  • 1 tsp garam masala
  • 500 g lamb
  • 1 kg spinach
  • 3 green chillies finely chopped
  • 2 tsp cumin seeds
  • Coriander

Method:

  •  Heat up the vegetable oil in a pan on medium flame.
  • Add the onions and salt then cook for 3-4 minutes until the onions are slightly softened. 
  • Then add the garlic cloves and crushed ginger then cook for a further 2-3 minutes.
  • Add the lamb then stir and cover the pan
  •  Cook on medium heat for 20 minutes until the lamb has released its water.
  • Add the chopped tomatoes then again cook for 3-4 minutes, stirring occasionally, until the tomatoes soften.
  • Add the chilli powder, turmeric powder, cumin powder, coriander powder, garam masala and the dried fenugreek leaves then cook the spices for 4-6 minutes.
