Though there are multiple types of achaars available in the market these days, we usually prefer homemade ones. Those have a distincvtive aroma and taste. You may have heard of sour-tasting mango pickle but this seems something different. Its tangy, spicy yet sweet taste is enough to tickle your tastebuds. Its bursting flavours are the reason Haryanvis can't resist it. You do not require a month to prepare this achaar by exposing it to sunlight. Teent Ka Achaar

To make this pickle, you need:

  1. Teent: 200 grams
  2. Mustard oil:  ½ cup 
  3. Chilli powder:  1 tsp 
  4. Ajwain powder: 1 tsp 
  5. Fennel powder: ½ tsp 
  6. Turmeric:  ½ tsp
  7. Asafoetida and salt: ½ tsp

Preparation:

  1. Remove the stem of the nicely washed teent. 
  2. Expose them to sunlight for a few hours and then apply salt on them.
  3. Keep the teent in a jar for a day.
  4. Take a pan. Add oil and let it heat for a few seconds. Now, add the ingredients like turmeric, ajwain powder, asafoetida, fennel powder, and chilli powder. Mix them well and saute for 1 minute. 
  5. Now, add the salted teent to it and saute for a few minutes. Now transfer the mixture to a different utensil and let it cool down. 
  6. Once done, put them in an airtight jar and expose the jar to the sunlight for 2 days.
