Easy-to-make delicious sandwiches often make it to our breakfast table. However, the fillings are usually wrapped inside two slices of bread. Let’s ditch the hide and seek game and try some open sandwiches that are yummy and can be quickly prepared at home every morning.

For the unversed, an open sandwich is a slice of toasted bread, which is topped with all kinds of fillings that you would usually add to a sandwich. The only difference is that it won’t be covered by another slice of bread on top. Also known as an open-faced sandwich, the idea of this variety is to give an appetising appearance for your breakfast by showcasing the stuffing on top. Not just breakfast, open sandwiches are quite popular across Europe for lunch too. In fact, in some places, bagels replace the bread slice to make open sandwiches too.

1.  Paneer Open Sandwich

Mash some paneer and spruce it up with spices like red chilli powder, cumin seeds, and salt. Add to this some chopped onions, capsicum, and green chillies. Slather this mixture on top of a toasted slice of bread that is covered in tomato ketchup. Add some sliced cucumbers and tomatoes, if you like and enjoy this wholesome breakfast sandwich.  

2.  Masala Egg Open Sandwich

For an ‘eggetarian’, eggs are usually the best source of protein for breakfast. Prepare a masaledar mixture of boiled eggs, cut into small pieces, mixed with loads of onions, tomatoes, and coriander leaves. Spruce it up with spices and add turmeric powder for the yellow colour. You could also make an egg bhurji as an alternative for the topping. Place it on the toasted bread and gobble down.  

3.   Corn Chutney Open Sandwich  

The key ingredients of this open sandwich happen to be boiled sweet corn, coriander and mint chutney as well as paneer. The three are layered on a slice of bread and topped with grated cheese. Bake the sandwich or heat in the microwave for a few minutes so that the cheese melts. Garnish with oregano and chilli flakes and eat it right away.  

 4.  Carrot Open Sandwich

This is a healthy take on an open sandwich. Super colourful, tasty, and healthy, this sandwich is made with grated carrots, cucumbers, and paneer. Whole wheat brown bread slices form the base of the sandwich, while it is slathered with tomato ketchup and garnished with coriander and celery. Sprinkle some sesame seeds on top and you’re done.

5.   Mushroom Oregano Open Sandwich

Add a meaty and chunky touch to your open sandwiches with these chopped mushrooms. Onions, green chillies, and oregano add flavour to the sandwich, while butter lends it a greasy texture. The addition of butter softens the mushrooms and makes them taste heavenly on a slice of toasted bread. Garnish with some fresh parsley and enjoy.
