Here’s the recipe for Mandakki Upkari.

Ingredients:

  • 200 gms puffed rice
  • 2 finely chopped, medium-sized onions
  • 1 tbsp raw coriander seeds
  • 1 tsp raw cumin seeds
  • 3 green chillies
  • 40 gms grated coconut
  • Salt, to taste
  • 1 tbsp jaggery
  • 1 tbsp coconut oil

Method:

For the spice mix:

  • The spice mix is a blend of a few spices, salt, and oil.
  • For this, start with blending 1 tbsp of raw coriander seeds, 1 tsp of cumin seeds into a blender jar.
  • Make a fine powder out of this.
  • Add 3 green chillies to the prepared powder.
  • Add 40 gms of grated coconut and blend.
  • Add salt, followed by 1 tbsp of jaggery to balance the taste
  • Give this mixture a final blend

For the mandakki upkari:

  • Put the puffed rice in a bowl.
  • To this, add the prepared spice mix.
  • Now, chop 2 medium-sized onions and add to the mandakki.
  • Add 1 tbsp of coconut oil and mix all the ingredients.
  • Mandakki Upkari is ready to serve.
