India is celebrating Makar Sankranti. The festival marks the onset of longer, warmer days and typically falls on the 14th of January every year, coinciding with festivals like Lohri, Pongal, Uttarayana and Magha Bihu. Fairs, kite flying, bonfires, and feasts are some common features of this Indian festival.
Like every Indian festival, food plays a dominant role in Makar Sankranti celebrations From Punjab to Assam, UP to Gujarat, every region has given its own regional spin to the festival with their delicacies that are prepared with seasonal, local ingredients. Til (sesame), Gur (Jaggery) are usual suspects in most of these dishes since they are warm in nature and keep you fortified to fight the cold wave. You can find them in ladoos, snacks, halwas etc. Winter vegetables like mustard greens and yam are used in festive delicacies like Sarso Ka Saag (Punjab), Undhiyo (Gujarat). Rice also plays a key role, there is a tradition of eating Khichdi in many Northern parts of India, while in South India’s Pongal, rice is allowed to boil and spill over, marking prosperity.
