Every part from petals to stem of the plant is useful and has an important role in Ayurveda. We all admire the gorgeous flower that symbolizes purity and beauty, but did you know the root of the flower that is inside the soil of pond or river is also of great importance?

Lotus root, commonly known as ‘kamal kakdi’ is a familiar name in Indian as well as some other Asian cuisines. It has reddish-brown skin and creamy white flesh similar to the texture of raw potato. It is crunchy and sweet and can be cooked in many forms such as curries and salads. And just like raw potato, once cut, the root starts discolouring, therefore it is always advised to soak it in water with a little vinegar after it’s peeled or sliced. The dry and powdered form of the root is also used in herbal medicine.

Ingredients:

  • 250 gm lotus root  
  • 100 gm pork chicken 
  • 1 L water 
  • 100 gm peanuts 
  • 4 dates  
  • 3 slices ginger 

Method:

  • In a large pot, add the root, chicken, ginger, dates, peanuts and water. 
  •  Bring them to boil. 
  • Once it has boiled, turn the heat to the lowest setting and cover with lid.  
  • Allow the soup to simmer for at least 2 hours.

And your healthy Chinese soup is ready to serve.
